Oh boy, do I have an absolutely delicious recipe for you today! Cashew Butter Butterscotch Banana Bread. Yeah, I know, that’s kind of a crazy long name, but for this crazy good bread, it fits.
This moist and tender bread is packed full of flavor thanks to Jif Cashew Butter, chopped cashews, butterscotch chips (you could use chocolate instead) and coconut (if you aren’t a coconut fan, just leave it out!). And the scent that filled the house while it was baking… let’s just say it was incredibly hard to wait for it to finish baking.
The folks at Jif recently asked me if I would like to try their new no-stir nut butters, as well as share some of my tips for how we mix up mealtime in our home.
This bread is a fabulous of example of mixing up mealtime with my family. Everyone knows that mornings are tough, and for my husband and I, we are very focused on getting our girls fed, dressed and ready for their day. So focused that our own breakfasts aren’t much more than coffee or whatever scraps the kids leave behind. While I do a lot of baking, most of my breads, muffins and breakfasts are made with my daughters in mind, and are reserved for the girls. Like most parents, we are kind of on the end of our own lists.
Every now and then I like to mix it up though, and bake up something that is for my husband and myself, and this bread fits the bill. It’s something that I try to do if we have an really early morning wake up call planned one day, if my husband is working on a project into the wee hours of the morning or just for the weekends when our three year old thinks that 5am is a fabulous time to wake up. Sometimes mornings are just hard, and mom and dad can use a little something extra to help get us going. This bread will do just that. It makes those tired mornings much sweeter, that’s for sure.
I love the unique flavor that butterscotch gives this bread, but if you aren’t a butterscotch fan, you can’t go wrong with chocolate chips. Or cinnamon chips – those would be incredible! I coarsely chopped my cashews for this bread, and they soften up a bit when baking, giving a great texture, especially when combined with the shredded coconut. This bread gets it’s moist texture from the Cashew Butter, Greek yogurt and bananas, with only three tablespoons of butter (and no full cup of oil like some recipes). Add in the whole grains from the white whole wheat flour, and while indulgent, this bread is certainly a better morning treat than those drive thru donuts.
