As most moms with picky eaters know, sometimes it can be a bit of a challenge to get the kids to eat their vegetables without too much of a meal time struggle. I’m always looking for new ways to get my kids to eat their veggies without any fuss, and today I’m going to share one of my favorite ways to do that, by using one of their favorite foods, macaroni and cheese.
I’ve teamed up with Horizon Organic Mac & Cheese to share how I use the top requested food in my house, macaroni and cheese, to get my kids to eat their veggies.
One night when we were at a restaurant, my oldest daughter ordered macaroni and cheese for dinner. It was served with a side of carrots, and without missing a beat, she started dipping her carrots into her macaroni and cheese, and within minutes, they were gone. My youngest, always wanting to do what her big sister does, followed suit. And right then I knew we had a magical pairing of macaroni and cheese, with carrot dippers!
Now when I serve macaroni and cheese, I not only include carrots for dipping, but I also add grated carrots to the macaroni and cheese itself. I’ve also added other veggies to be used as dippers, such as broccoli and snap peas. Between the kids loving macaroni and cheese, and that universal love kids seem to have for dipping, it’s such an easy and winning combo. I don’t think the kids even see it as a side of veggies, just a fun addition to their macaroni.
I also love that it can be whipped up in no more time than it takes to make your box of Horizon Macaroni And Cheese, as the veggies can be served raw. I love to serve this with chopped up leftover chicken, which can also be added right to your macaroni and cheese. I feel like so many nights I am absolutely scrambling to get dinner on the table, and this is such a great time saver and kid pleaser. I know I’m not the only mom with picky eater who lets out a giant sigh of relief (and feels like a huge success) when I put dinner on the table and the kids practically cheer.

- 1 box of Horizon Macaroni & Cheese in flavor of your choice, prepared according to package directions
- 1/2 cup shredded carrots
- 16 + carrot sticks washed
- 20 + snap peas washed
- Optional - serve with other raw veggies that your family enjoys using for dipping. You can also stir cooked chopped chicken into your macaroni for an all in one dish meal.
- Prepare Horizon Macaroni & Cheese according to to package directions. Immediately after preparing, stir in 1/2 cup of shredded carrots, and stir well to combine. Garnish each serving of macaroni and cheese with 4 (or more) carrot sticks and 5 (or more) snap peas, encouraging children to dip their veggies right in their macaroni and cheese.
