Around this time every year, I start craving fall. I love fall. It’s my favorite time of year. I want to put a pot of chili on the stove and some pumpkin pies in the oven. I want to decorate with jack o lanterns, plant mums and plan costumes while wearing a sweater and cozy boots.
But then I remember that I live in Phoenix, that it’s 149 degrees and that fall is probably six months away. And with further thought I realize that I really never need a sweater, or boots, even in winter, and I’ve never planted a mum in my life. There goes that plan. But there is no reason I can’t day dream about fall, and all things pumpkin. Let me share with you my pumpkin day dreaming…
I’ll start with my contribution. My low fat pumpkin muffins.
I have been messing with this recipe for probably two years, and it’s pretty much reached perfection (at least for our tastes). It is so moist and flavorful. Last month I made a loaf of full fat pumpkin bread (for my one year old little pipsqueak who is in the 5th percentile and needs all the fat she can get). We all agreed, the low fat version beats a full fat version, hands down. Much like my banana chocolate chip muffins, these freeze wonderfully. I also like to make them in muffin top pans or whoopie pie pans.
