Funfetti Cookies are both festive and delicious! With great vanilla flavor and a burst of color from sprinkles, these cookies are perfect for any celebration.

Ingredients
1cupbuttersoftened
1/2cuplight brown sugar
1/2 cupgranluated sugar
13.4ozbox instant vanilla puddingthe dry mix, you will not make the pudding. Do not use sugar free pudding mix.
2largeeggs
2 1/4cupsall-purpose flour
1tspbaking soda
1/2tspbaking powder
1tbspvanilla
1cupwhite chocolate chips
1cupsprinkles
Instructions
In a large mixing bowl, combine butter and sugars and beat well with an electric mixer until light and fluffy, approximately 2-3 minutes. Add in vanilla pudding mix and beat until combined. Add in eggs and vanilla and beat until combined.
In a separate bowl, combine flour, baking powder and baking soda. Mix well. Add dry ingredients to wet ingredients and mix until just combined. Add in white chocolate chips and sprinkles and mix until just combined.
Cover bowl with plastic wrap, foil or lid and chill in refrigerator for at least one hour, but no more than 24.
When ready to bake, preheat oven to 350 degrees F. Drop cookies onto a baking sheet that has been lined with a silicone baking mat or parchment paper. Each cookie should be approximately 1.5-2 tablespoons in dough. Leave at least 1" between each cookie to allow room to spread.
Bake for 10-12 minutes or until edges start to turn lightly brown. Remove from oven and place baking sheet on a wire cooling rack and alow to cool for 10 minutes, then carefully remove cookies from baking sheet with a spatula, and transfer to a wire rack to finish cooling. Store tightly covered.
Notes
Pressed confetti quin style sprinkles work best in this recipe as they are the least likely to bleed color. Jimmies are more prone to bleeding color and nonpareils are highly prone to bleeding color.
