Tater Tot Breakfast Casserole

This easy tater tot casserole with sausage is loaded with flavor and will leave you wanting more every time.

Ingredients

  • 1 tbsp salted butter
  • 2 pounds breakfast sausage
  • 1 medium onion finely diced
  • 1 30oz bag frozen tater tots
  • 6 large eggs
  • 1 cup milk
  • 1 cup half and half
  • 2 tsp seasoning salt
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 cup cheddar cheese shredded
  • 1 cup pepper jack cheese shredded
  • 1 cup mozzarella cheese shredded
  • Green onions and/or bell peppers for garnish if desired

Instructions

  • Preheat the oven to 375 degrees.(convection setting if possible) Grease the bottom and the sides of a 9X13 inch baking dish with butter.
  • Fry the sausage and onion together in a large skillet. This will take about 10 minutes, make sure there are no traces of pink left in the meat. In a large bowl, mix tater tots, sausage, and onion.
  • In a separate bowl, beat eggs slightly, add milk, half and half, seasoning salt, pepper, garlic, cheddar cheese, pepper jack cheese, and half of the mozzarella cheese.  Add this mixture to the tater tot and sausage mixture.  Pour the egg and cheese mixture this into the buttered 9X13 inch baking dish.
  • Bake for 50 minutes covered with tin foil, then remove foil and add the remaining mozzarella cheese. Bake for another 15 minutes uncovered.

Notes

  • Use any kind of sausage you like - spicy, mild, maple, etc. If you use links, just slice them long, down the middle, and remove the meat.
  • I used frozen tater tots. If they are thawed, this may need a slightly shorter cooking time (and may get kind of mushy when you are mixing). It needs to bake long enough so that the egg mixture is set.
