Place eggs, milks, vanilla extract, sugar, cinnamon and salt into a large bowl and whisk until well combined.
Place approximately 1-2 teaspoons of butter into a medium size skillet and heat over medium heat. Once skillet is hot, dip one piece of brioche bread into the egg and milk mixture, let extra liquid drip back into the bowl, then transfer to prepared pan.
Bake until golden on each side, approximately 2-3 minutes each. Repeat with remaining slices of bread, adding more butter to the pan as needed. Serve hot with butter, syrup and berries.
It's easy to scale this recipe up or down if you'd like to make more or less. Simply cut in half, or double. If desired, each slice of French toast can be put onto a baking sheet and placed into an oven preheated to 350 degrees for 5-10 minutes. This is great if you want to serve all the French toast hot at once.
Leftovers can be kept in an airtight container, such as a Ziploc style freezer bag, for up to four days. Reheat in the microwave, oven or in an air fryer.
