Boursin Cheese Pasta

Creamy Boursin cheese is melted down and combined with fresh vegetables, spices and al dente pasta, then quickly broiled to perfection and ready to eat in under 30 minutes.

Ingredients

  • 1 Box Boursin Garlic & Fine Herbs Cheese other flavors can also be used
  • 1 pound grape tomatoes
  • 1 medium shallot diced
  • 3 cloves garlic minced
  • 1/2 cup fresh basil sliced
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • pinch pepper
  • 1/4 teaspoon red pepper flake can use more or less if desired
  • 8 ounces pasta of choice more can be used, this is just a general guideline for four servings (2 oz per person)
  • 8 ounces OPTIONAL portobello or cremini mushrooms chopped or torn
  • 3 cups OPTIONAL fresh baby spinach
  • 2 tablespoons olive oil

Instructions

  • Preheat oven to 400 degrees F.
  • Place the Boursin Cheese in the center of the 9x9 inch baking pan. Place washed grape tomatoes around the cheese.
  • Sprinkle minced garlic, diced shallot and sliced basil over the tomatoes.
  • Drizzle 3 tablespoons of olive oil over the tomatoes and cheese. Top with salt, pepper and red pepper flakes.
  • Bake for 15 minutes, or until the grape tomatoes start to brown or split open.
  • While tomatoes and cheese are baking, cook and drain pasta according to package directions for al dente.
  • If using spinach and mushrooms, heat remaining olive oil in a pan over medium heat. Saute mushrooms until browned, approximately 5-8 minutes. Add spinach and cook until it just begins to wilt, approximately 1-2 minutes.
  • When cheese and tomatoes are done, remove from oven and top with cooked pasta, as well as mushrooms and spinach if using. Stir just until combined and serve immediately.
