Ingredients

  • 4 thick, boneless pork chops
  • 3 1/2 teaspoons garlic and herb seasoning divided
  • 1 teaspoon sea salt
  • 1 tablespoons avocado oil
  • 1/4 cup stone ground mustard
  • 1/4 cup fresh honey
  • fresh chopped parsley for garnish optional

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Pat the pork chops dry with a paper towel and then season well with 1 ½ teaspoons of the garlic and herb seasoning and the sea salt.
  • Heat the avocado oil over medium high heat in a large skillet until it shimmers.
  • Sear the pork chops in the hot oil for about 1-3 minutes on each side or until just golden brown. The meat should not be cooked through at this point. It will continue to cook in the oven.
  • While the pork is cooking, mix together the stone ground mustard, honey, and the remaining 2 teaspoons of garlic and herb seasoning in a medium mixing bowl.
  • Remove the seared pork from the skillet and set aside for now. If your skillet is not oven safe, place pork chops into an oven-safe casserole dish in place of the skillet.
  • Put the honey mustard mixture into the hot skillet and stir until everything comes off the bottom of the skillet.
  • Place the pork chops back into the skillet and spoon sauce over the top until each pork chop is fully covered. If using a casserole dish, pour the sauce over the pork chops. Bake for 10-30 minutes or until the pork reaches 145 degrees Fahrenheit internally. Do not overbake.
  • Broil for 1-2 minutes or until the top is caramelized, and then remove from the oven. Serve hot with a parsley garnish, optional, and steamed green vegetable side, optional.

Notes

Storage – Store the leftover pork chops in an airtight container in the fridge for up to 3-4 days. You can also freeze them for up to 3 months as long as you wrap them individually with plastic wrap or aluminum foil, and keep them in an airtight container or freezer bag.
