Start by preheating your oven to 375°F. Bring a large pot of water to a boil and cook your lasagna noodles according to the directions on the package. You’ll want to cook them until they are al dente, so cut a minute or two off the cooking time.
Lay out a clean kitchen towel. Drain the lasagna noodles and lay them out on the towel to prevent them from sticking. Set those aside and start on the filling.
Grab a large mixing bowl and add the ricotta cheese, 1 cup of the mozzarella cheese, parmesan, egg, minced garlic, basil, dried oregano, salt and pepper. If you choose to add meat, cook, crumble & drain the ground meat before adding it to the filling. Stir everything together until evenly combined. Set this aside.
Grab a 9x13 baking dish. Pour 1 cup of marinara sauce into the baking dish and spread it evenly across the bottom.
Grab a lasagna noodle, and spread about 2-3 tablespoons of the cheese mixture on top of the noodle evenly. Roll the lasagna noodle up tightly starting from one end to the other. Place the rolled up noodle seam side down into the baking dish. Repeat with the rest of the noodles until the baking dish is full.
Pour the rest of the marinara sauce on top of the lasagna roll ups and spread evenly. Sprinkle the remaining ½ a cup of mozzarella on top, then cover the baking dish with aluminum foil. Bake in the oven for 25 minutes. Take the dish out, and remove the foil. Pop it back in the oven for an additional 5 minutes, until the cheese becomes a golden brown and starts to bubble. Let the dish cool for a few minutes before garnishing with fresh basil and serve!
