Christmas Sugar Cookie Bars

A soft sugar cookie dough is baked into buttery, chewy squares and frosted with a dreamy buttercream frosting. Top with your favorite Christmas sprinkles and enjoy!

Ingredients
 

Cookie Bars Ingredients

  • 1/2 cup butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons sour cream
  • 2 teaspoons pure vanilla extract
  • 2 1/3 cups all purpose flour
  • 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Frosting Ingredients

  • 1/2 cup butter (softened)
  • 2 cups powdered sugar
  • 1-2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Christmas sprinkles (for garnish)

Instructions
 

  • Preheat the oven to 375°F. Neatly line a 9×13 baking pan with parchment paper or aluminum foil then grease with a non-stick cooking spray.
  • Add softened butter and sugar to a bowl and mix with a handheld or stand mixer for 2-3 minutes or until fluffy. Add in the egg then sour cream and beat until combined. Add flour, baking powder and salt, and fold it all together until just combined. Try not to over mix. 
  • Spoon dough into the baking pan, and press it with your hand to even out the dough into the bottom of the pan. Place in the oven then bake for 15 minutes, or until set. You’ll know it's ready when the middle is just starting to look cooked, and the sides are lightly brown. Take the pan out of the oven and allow it to cool completely.
  • While cooling, make the frosting. To a bowl, add the softened butter and powdered sugar. Beat this together with an electric mixer until smooth. Add the milk and vanilla and continue to whip until soft and fluffy.
  • To make frosting, combine softened butter and powdered sugar in a bowl and mix with an electric mixer until well combined. Once the bars have cooled completely, frost, then add sprinkles to the top. Cut into even squares, then serve. Enjoy!

Notes

Storage - Store the remaining cookie bars in an airtight container at room temperature for 3-4 days. You can also store them in the fridge for up to a week. I personally enjoy when the cookie bars are slightly chilled!
