No Bake Cookie Dough Bites are a quick and easy way to enjoy perfectly portioned servings of cookie dough, made without flour or eggs.

Ingredients
 

  • 5 tbsp unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar (firmly packed)
  • 2 tsp pure vanilla extract
  • 1 1/2 cups finely ground almond flour (finely ground oat flour can be used instead)
  • 1/4 tsp finely ground salt
  • 4-5 tsp heavy cream or milk
  • 1/3 cup mini chocolate chips
  • 2 tbsp sprinkles (optional)

Instructions
 

  • Line a large baking sheet with parchment paper and set aside.
  • In a medium mixing bowl, cream together the butter, granulated sugar, and brown sugar with a hand-held or stand mixer fixed with the paddle attachment. Add the vanilla and mix until well-combined. 
  • Mix in the almond flour and salt until well-combined. At this point the dough will be quite crumbly. Stir in the milk until the dough begins to stick together. 
  • Gently fold in the chocolate chips and sprinkles if desired.
  • Use a cookie scoop to scoop the dough into evenly sized balls and place on the baking sheet leaving space between each dough ball. 
  • Place the cookie dough bites in the freezer for 20 minutes or refrigerate for 1 hour or until set. Enjoy!
