Ingredients

  • 1 pound chicken breast boneless, skinless & diced into cubes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 cloves fresh garlic micned
  • 1 teaspoons oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 cup cherry tomatoes halved
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese freshly grated
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup fresh basil chopped
  • 8 oz dry fettuccine pasta

Instructions

  • Cut the chicken breasts into cubes. Add them to a bowl and season with garlic powder, salt, & pepper.
  • Heat a skillet over medium-high heat with olive oil. Add the chicken and cook for 5-7 minutes each side. Remove from the skillet when cooked through and browned then set aside.
  • Boil water and cook the pasta according to package directions.
  • While that cooks, add the garlic, oregano, dried basil, red pepper flakes, salt and pepper to the skillet and saute for 1-2 minutes. Add the halved cherry tomatoes and cook for another 2-3 minutes or until soft.
  • Add heavy cream and stir until it comes to a simmer. Add fresh parmesan and stir until smooth. Add the sun-dried tomatoes, fresh basil and stir.
  • Add the chicken back in, then drain the pasta and add it to the sauce. Toss to coat the chicken and pasta in the sauce. Serve and garnish with extra fresh basil and parmesan.
