Cashew Butter Butterscotch Banana Bread


  • 3 large very ripe bananas mashed
  • 1/3 cup vanilla Greek yogurt
  • 1/3 cup Jif Cashew Butter
  • 1 tsp vanilla
  • 3 tbsp melted butter
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups white wheat flour you can also use all purpose
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup butterscotch chips reserve about 1/4 cup for top of bread if desired
  • 1 cup shredded coconut
  • 1 cup chopped cashews


  • Preheat oven to 350 degrees F.
  • In a mixing bowl, combine mashed bananas, yogurt, Jif Cashew Butter, vanilla and melted butter. Mix until well combined. Stir in eggs, followed by sugars. Mix until all ingredients are well combined. In a separate bowl combine flour, salt and baking soda. Stir dry into wet ingredients, add in butterscotch chips, coconut and chopped cashews, mixing by hand until combined, but do not over mix.
  • Pour into a 9"x5" loaf pan that has been sprayed with non stick cooking spray. If desired sprinkle top of bread with more butterscotch chips.
  • Bake for approximately 70-80 minutes or until knife inserted into center comes out clean. If bread starts to brown more than you like, carefully cover with a sheet of foil after about 50 minutes and leave covered for the remaining baking time.
  • Remove from oven and cool for 10-20 minutes before removing from pan to finish cooling on a wire rack. Enjoy!
