When you want pie but don't have a pie pan, galette is the answer! This Cherry and Dark Chocolate Galette from Weeknight Gourmet Dinners is as delicious and easy as it is beautiful.
Ingredients
12ozfrozen cherries (halved)
2 tbsgranulated sugar
1tbscornstarch
1tbscorn syrup
1tspalmond extract
1/2cupdark chocolate chips
1prepared pie crust (dough)
3tbsheavy creamor half-and-half
3 tbslight brown sugar
Instructions
Preheat oven to 400 F. In a large bowl, combine cherries, sugar and cornstarch. Stir the cherries until evenly coated. Add the corn syrup, almond extract and chocolate chips and mix until well combined.
Carefully roll out a pie crust on a sheet pan lined with parchment paper. Spoon the cherry mixture into the center of the pie crust. Spread out the cherry mixture, leaving a 2 inch bare margin around the edges of the crust. Bring the edges of the crust over the fruit, folding it over the cherry mixture.
Brush the crust with the cream and sprinkle brown sugar over it.
Bake for 25 - 30 minutes or until the crust is golden brown. Let the galette cool completely on a wire rack before serving.
