This quick and easy fried rice recipe makes for a quick side dish or main dish meal. Ingredients are flexible and it's great for using up leftovers.

Ingredients
2cupscooked long-grain white ricechilled
2tbsp vegetable oil
12-16ozbag frozen peas & carrots*thawed
1-2cooked boneless chicken breasts cut into small bite size pieces
2clovesgarlicfinely minced
2largeeggslightly beaten
3tsp soy sauce
2tspsesame oil
salt & pepper to taste
Instructions
In a large skillet, heat oil on medium heat. Add rice, peas and carrots, chicken and garlic to pan, stir and cook for 2-3 minutes until throughly combined and warm.
Add soy sauce, sesame oil, salt and pepper to rice, stir well and cook for another 2-3 minutes.
Depending on the size of your skillet, rice mixture can be pushed to the side of the pan or removed from the pan, then scramble eggs in pan. Once eggs are cooked combine with rice and mix. Cook an additional 3-4 minutes. Serve and enjoy.
Notes
*To quickly thaw peas and carrots, place in a strainer and run under warm water for 1-2 minutes.
