Line a large baking sheet with parchment paper and set aside.
In a medium mixing bowl, cream together the butter, granulated sugar, and brown sugar with a hand-held or stand mixer fixed with the paddle attachment. Add the vanilla and mix until well-combined.
Mix in the almond flour and salt until well-combined. At this point the dough will be quite crumbly. Stir in the milk until the dough begins to stick together.
Gently fold in the chocolate chips and sprinkles if desired.
Use a cookie scoop to scoop the dough into evenly sized balls and place on the baking sheet leaving space between each dough ball.
Place the cookie dough bites in the freezer for 20 minutes or refrigerate for 1 hour or until set. Enjoy!
