Saltine Cracker Toffee

This cracker candy needs only 5 ingredients, starting with a crispy saltine base, covered in toffee and chocolate layers, and finished with finely chopped pecans.

  • 9x13 Baking sheet with rim

Ingredients
 

  • 4 ounces saltine crackers
  • 1 cup butter
  • 1 cup dark brown sugar
  • 2 cups semi-sweet chocolate chips
  • 3/4 cup pecans (chopped)

Instructions
 

  • Preheat the oven to 400°F. Prepare a baking sheet with parchment paper. Line up your saltine crackers on the baking sheet so they fill the entire sheet. Set aside.
  • In a saucepan over medium heat, add the butter and brown sugar. Stir until melted down and fully combined. Let this come to a boil while whisking occasionally. Let it boil for 3 minutes, until it reaches a golden brown color.
  • Once golden, pour the sugar mixture over the saltine crackers right away, evenly covering all the crackers to the best of your ability. Spread with a spatula to even it out.
  • Bake in the oven for about 5 minutes, remove and quickly sprinkle the chocolate chips evenly over the caramelized crackers. Let the chocolate chips sit for 4-5 minutes, or until they’ve softened completely. Use a spatula to spread the chips into an even layer of chocolate.
  • While the chocolate is still warm, sprinkle chopped pecans over the toffee. Let this cool for about 30 minutes or until the chocolate has hardened and the bottom has cooled completely. Break into small pieces, serve and enjoy!

Notes

Storage - Store the leftover toffee in an airtight container with parchment or wax paper in between layers of the crackers. Keep these at room temperature for 3-4 days or in the fridge for up to 2 weeks. You can even freeze it for up to 4 months.
