Taylor Swift Chai Cookies Recipe

Delicate, buttery, chai-spiced sugar cookies meet a flavorful and rich icing that come together like a Love Story to make the perfect, cozy cookie for the Fall season. 

Equipment

Ingredients
 

Cookie Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 bag chai tea* (the contents in the tea bag, not the bag. )
  • cinnamon sugar (for rolling)

Icing Ingredients

  • 1 1/2 cups powdered sugar
  • 3 tablespoons eggnog (or milk/cream)

Instructions
 

  • In a large mixing bowl, add softened butter. Beat with an electric hand or stand mixer until smooth. Add the vegetable oil and combine. 
  • Pour in the granulated sugar, powdered sugar, egg, and vanilla extract. Beat together until smooth. 
  • Add the flour, baking soda and salt as well as the contents of the chai tea bag or the chai tea spices. Fold everything together until combined. Cover the bowl with plastic wrap and store in the fridge for about an hour. 
  • Once chilled, Preheat oven to 350°F. Grease a baking sheet or line it with parchment paper. Set aside. Scoop out even, tablespoon-sized drops of cookie dough. Roll into balls, cover each one in cinnamon sugar, then very gently press the cookies down slightly with the bottom of a glass or flat surface.
  • Bake for 8-10 minutes in the oven, or until the sides turn slightly golden. Remove the cookies from the oven and let them cool on the sheet for 5 minutes, then transfer them to a cooling rack to cool completely. 
  • While cooling, create an icing made with 1 1/2 cups of powdered sugar and 3 teaspoons of eggnog. Mix together until smooth. 
  • Once cooled completely, spread a spoonful of icing onto the top of the cookies. Let that harden, then enjoy! 

Notes

You can either use the contents of a chai tea bag, (cut open a bag of chai tea and add it to the dough) OR you can create your own chai tea spice mix using ground cinnamon, ginger, allspice, nutmeg, cardamom, cloves, and black pepper. Use one or the other, not both.
If creating your own mix, here's a guideline to go by. You can increase or decrease any as you see fit, and if you don't have one, just leave it out, they will still be delicious!
  • 1 tsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cardamom 
  • 1/8 sp ground cloves
  • pinch of fresh ground pepper
