Fill a large pot with your peeled and cubed potatoes. Pour water into the pot until the potatoes are covered.

Place the pot over high heat. Salt the water if you’d like, and bring to a boil.

Check on the boiling potatoes every few minutes. Once the potatoes easily break apart when pierced by a fork, the potatoes are done. Turn off the heat and drain the potatoes in a strainer.

Return the potatoes to the pot and add butter, cream cheese, the half and half, sour cream, and seasonings.
