Ingredients
Dressing
1/3cupolive or avocado oil
2tablespoonsfresh lime juice
2tablespoons red wine vinegar
1teaspoongranulated sugar
1/2teaspoonsalt
1/2teaspoonpepper
1/2teaspoongarlic powder
Dip
3roma tomatoes, dicedmake sure to remove seeds
2avocados, dicedmake sure to use ripe avocados
1bell pepper, dicedany color or a combo
1jalapeno, finely dicedmake sure to remove seeds
1/3cupparsley or cilantrochopped
1/2cupred onion, diced
15ouncesblack beansrinse well and drain
15ouncesblack eyed peasrinse well and drain
15ounceswhole kernel sweet corndrained
Instructions
In a small bowl or measuring cup, combine all dressing ingredients and whisk until well blended.
Combine all dip ingredients in a large bowl, and mix gently to combine.
Pour dressing over dip ingredients and gently toss to combine. Serve immediately or cover and place in refrigerator.
Serve with tortilla chips.
