One Bowl Caffeinated Coffee Brownies

If you love coffee, double the espresso powder in these amazing, moist and rich (yet super easy to make) brownies. As is the recipe has just a light hint of coffee, and even non-coffee lovers will LOVE these!

Ingredients
 

  • 1/3 cup dark cocoa powder
  • 1/3 cup regular cocoa powder
  • 1 and 1/2 cup sugar
  • 1/2 cup powdered sugar
  • 3/4 tsp salt
  • 1 cup all purpose flour
  • 2 tsp espresso powder (for more coffee flavor, double this amount)
  • 1 cup chocolate chips (chunks, nuts or even chocolate covered espresso beans)
  • 1/3 cup coffee flavored yogurt
  • 3 large eggs (room temperature)
  • 1/3 cup vegetable oil
  • 2 tsp vanilla
  • 2 tbsp brewed coffee (make sure it has cooled slightly, warm is okay, but you do not want it hot)

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine cocoas, sugars, salt, flour, espresso powder and mix ins. Add in yogurt, eggs, vegetable oil, vanilla and coffee. Stir until just combined, do not overmix.
  • Scoop batter into an 8x8 or 9x9 pan that has been lightly sprayed with cooking spray. I prefer to line my pan with foil, then spray the foil, as this makes it easy to remove the brownies from the pan, slice and serve.
  • Bake for approximately 35 minutes for an 9x9" pan or 45 minutes for an 8x8" pan. To check if they are done, place a knife or toothpick into the center. When you pull it out, it should still be a little moist, but starting to bake up.
  • Remove from oven an allow to cool in pan for at least 30 minutes. Serve and enjoy!
