Ingredient Notes and Substitutions

  • Lasagna Noodles – I prefer cooking the noodles ahead of time, then adding them into the soup at the very end. This ensures the noodles won’t be too soggy. If you can find Mafalda pasta, those noodles could be cooked in the soup itself.
  • Ground Beef – Lean ground beef is a great choice, but ground turkey, or even Italian sausage works wonders with this dish. If desired, you can leave out the meat entirely.
  • Chicken Broth – While I prefer the taste that chicken broth provides in this recipe, you can also use beef broth.
  • Pasta Sauce – Feel free to use whatever pasta sauce your family enjoys. We find Rao’s to be a great choice.
  • Garnishes –  This includes, but not limited to, shredded mozzarella cheese, grated parmesan cheese, ricotta cheese, and chopped fresh basil or parsley. However, the options are endless and totally up to you!

How To Make Lasagna Soup

  1. Add oil in a Dutch oven at medium high heat, then brown the ground beef, garlic and diced onion together.
  2. Stir in the pasta sauce, chicken broth, crushed tomatoes, Italian seasoning, sugar, salt and pepper.
  3. Bring to a boil, then let it simmer for 30 minutes.
  4. While the sauce cooks, prepare the lasagna noodles according to the box. (Only cook them until just tender, al dente.)
  5. Cut the noodles into bite size pieces and add them to the soup at the end of its cooking time. 
  6. Serve with desired garnishes.

Recipe Tips and Advice

Noodles: If you’d prefer, you can cook the noodles in the broth itself, but there is no easy way to cut uncooked lasagna noodles. If you chose to use this method, Mafalda pasta, or 2 and ½ cups of uncooked pasta shells would be the perfect alternative.

Soup Consistency: This is a very brothy soup. If you would prefer a thicker consistency, you can reduce the amount of broth you use. You will want to use at least 3 cups of broth.

Say Cheese: When it comes to garnishing this lasagna soup recipe, I like to use ricotta, mozzarella and parmesan cheese. But you can also use romano and cottage cheese.

Storage: This recipe makes great leftovers if you add the pasta and cheese to each individual serving. The broth can last up to 3 days in the fridge, or 3 months in the freezer as long as you use an airtight container to store it.

It’s important to make sure to only cook the noodles to al dente to prevent them from soaking up too much of the soup.

Should I boil noodles before adding to soup?

Yes, doing so allows you to have much better control over the cooking, which can help you ensure al dente noodles.

Why do my noodles turn to mush?

It’s very important to use a pot that allows plenty of space for the pasta to cook. When pasta is crowded in a pot, it often takes longer for the water to return to a boil, and while the pasta sits in the water during this time it can tend to get a bit mushy and clump together.

This Lasagna Soup Recipe is a game changer for those times when you’re craving that layered pasta goodness, but don’t have the hours it takes to make it. 

Ingredients
 

  • 1 tablespoon oil (olive, vegetable or canola work well)
  • 1 pound lean ground beef
  • 1 large yellow onion (diced)
  • 4 cloves garlic (minced)
  • 24 ounce jar of spaghetti sauce (28 ounce jar also works if that's the size you have on hand)
  • 5 cups chicken broth (This can be cut down to 3 or 4 cups for a thicker consistency if desired. )
  • 14 ounce can crushed tomatoes
  • 1 tablespoon Italian seasoning
  • 1 teaspoon granulated sugar (this can be left out if desired)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 10 uncooked lasagna noodles
  • Garnishes as desired (ricotta, mozzarella, parmesan, parsley and basil are all great choices )

Instructions
 

  • Add oil to Dutch oven or large stock pot, turn to medium high heat and brown the ground beef, garlic and diced onion together.
  • Stir in the pasta sauce, chicken broth, crushed tomatoes, Italian seasoning, sugar, salt and pepper.

    We loved this soup! It was all gone by the time dinner was over. I served each bowl with a large spoonful of ricotta in it. We will be having this soup again.
