Ingredient Notes and Substitutions

  • Baby Spinach – One of the things I love best about this crockpot spinach artichoke dip recipe is that it uses fresh spinach. Make sure if you wash it that it’s completely dried. You can roughly chop the spinach or leave it whole, it’s a matter of preference.
  • Artichoke Hearts – Make sure to drain the artichoke hearts well.
  • Cream Cheese – I find it works best to use cream cheese that is already softened. It allows you to mix the ingredients together much more easily. Make sure you are using the cream cheese that comes in a brick, not the kind that comes in a tub.
  • Sour Cream – I prefer to use a full fat sour cream in this recipe. You could also use Greek yogurt, though it does change the taste. While this recipe is made without mayonnaise, if you wanted to you could use half mayo and half sour cream.
  • Cheeses – I strongly prefer to use freshly grated cheese. It just does a better job of melting than the pre-grated cheese does. That said, you can absolutely grab a bag of pre-grated cheese and go with that – it will still work, just give a good stir.
  • Vegan Option – If you’d like to make this recipe vegan, use dairy free cream cheese & sour cream/yogurt (Kite Hill is a great choice) and dairy free cheeses (Violife is a good options).

  1. Combine all of the ingredients in a slow cooker and mix until well combined.
  2. Cover and cook on low for 2 hours or on high for 1 hour, stirring well halfway through cooking. Serve warm.

Storage & Reheating

Store tightly covered in refrigerator for up to three days. 

To reheat, place a portion of the dip in a microwave safe bowl and heat for 30 seconds. At 30 seconds, remove from microwave, stir and check the temperature. If more time is needed, heat for an additional 30 seconds, stir and check again. Repeat as needed.

Browning

One thing slow cookers don’t do extremely well is giving that gorgeous brown roasted appearance. If you desire that, once your dip is ready add 1/2 of a cup of mozzarella cheese to the top and pop it in the oven and broil for 1-2 minutes to get the top golden brown. As always keep a close eye on it as broilers work quickly. If your crock pot has a removable stoneware crock you can just broil it in that, otherwise simply transfer the dip to an oven safe dish prior to placing in the oven.

Yes, you can make this crockpot spinach artichoke dip in advance. You can either make it completely, then reheat it when you are ready to serve, or you can combine all the ingredients in advance and pop them in the crockpot when ready to cook.

Why is my spinach artichoke dip runny?

This can be a common problem when using frozen spinach, due to the water in the frozen spinach. Using fresh spinach really helps eliminate this problem. Just make sure the spinach you use is dry, and that you dry off the artichoke hearts as well, prior to adding them.

What do you eat with spinach artichoke dip?

You can serve spinach artichoke dip with potato chips, tortilla chips, pita chips, crackers, carrots, celery sticks or toasted baguette slices.

Are you supposed to eat spinach artichoke dip hot or cold?

This depends on who you ask, but we prefer to eat it hot, it makes the most of all the cheesy, melty goodness in it!

  • 13-15 ounces canned quartered artichoke hearts (well drained)
  • 8 ounces cream cheese (softened )
  • 1 cup sour cream
  • 1 1/2 cups grated mozzarella cheese
  • 1/2 cup freshly grated parmesan cheese
  • 4 cloves garlic (minced )
  • 2 shallots (thinly sliced)
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon sea salt
  • pinch cayenne pepper
