This easy and delicious lemon lime bundt cake is perfect for spring and summer. It’s a moist and delicious cake, with with a fun citrus twist, that the whole family will love!

Lemon Bundt Cake

Here in Phoenix the citrus trees are full of fruit, and I love working citrus flavors into my baking. When my friends at The J.M. Smucker Company asked me to share how I would mix up a moment with Pillsbury Cake Mixes and Frostings, a citrus flavored cake instantly came to mind. I adore lemon and lime desserts, and since my Dad is giving away citrus by the bag full, this was an easy choice! Thank you to The J.M. Smucker Company for sponsoring this post.

While I love baking from scratch, sometimes it’s great to be able to whip up a spur of the moment dessert, which is so easy to do with Pillsbury products. I stock up on mixes when I’m at Walmart, and can then easily pull one out of the pantry and mix up a moment for my family whenever I want, with very little planning.

I don’t know about other moms, but every day it feels like it’s a challenge to stay on top of everything and juggle all the balls. Work, school, extra curricular activities, homework, the leaky pool pump, overdue library books, a vet appointment for the dog, speech therapy for one child, physical therapy for the other, figuring out if last year’s summer clothes will fit the kids this year… we are all juggling a million things each day. I think that’s why it’s nice to have easy meal and dessert options on hand. Some days, even if quite a few of those balls might have gotten dropped, it’s great to be able to pull together dinner and dessert without much planning, mix up a moment, and slow down and spend time with my family.

This lemon lime bundt cake is really simple, I think you are going to love it! I love the ease of a bundt cake, no layers to worry about and frosting it couldn’t be easier!

For fun I divided my batter and colored half yellow and half green. While it makes for a pretty cake, you can totally skip this step, which will make this cake even quicker and easier for you. If you do decide to divide and color your batter like I did, you’ll simply spoon the batter into your bundt pan to create almost a patchwork, and give it a very slight mix with a knife.

After baking my cake I mixed some lemon and lime juice with my frosting in a mixing cup. For my cake I used about half a can of frosting, and you could use less or more, totally up to you. I heated my frosting, mixed with the lemon and lime juices, in the microwave for 20-40 seconds until it had a more liquid consistency, then drizzled it over my cake.

I used a bit of my lemon and lime peel for garnish. I tossed them with some sugar and then sprinkled them on the top of my cake. This isn’t a true candied peel, but it’s a pretty accent.

Ingredients

CAKE

  • 1 package Pillsbury™ White Cake Mix
  • 1 cup sour cream
  • 1/2 cup oil
  • 4 eggs
  • 1 teaspoon finely grated lemon peel
  • 1 teaspoon finely grated lime peel
  • 1 teaspoon lemon juice

FROSTING

  • 1 Can Pillsbury Creamy Supreme Vanilla Frosting
  • 2 teaspoons lemon juice
  • 2 teaspoons lime juice

Instructions

  • 1. HEAT oven to 350°F. Coat 12-cup bundt pan or 10-inch fluted tube pan with no-stick cooking spray. Dust with flour.
  • 2. BEAT cake mix, sour cream, oil, eggs, lemon juice, lemon peel and lime peel in large bowl with electric mixer on low speed 1 minute or until moistened. Beat on medium speed 2 minutes. Spread evenly in prepared pan.
  • 3. BAKE 40 to 44 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan to wire rack to cool completely.
  • 4. In a microwave safe bowl, mix frosting with lemon and lime juice, and microwave for 20-40 seconds and stir well. Drizzle over cake.
