I love breakfast. I love it in the morning, the evening, late at night. Hands down, breakfast is probably my favorite meal of the day. In a house full of picky eaters, breakfast always seems like the one meal that everyone loves what’s being served. I am always up for breakfast for dinner, so when my friends at Krusteaz asked me to share a breakfast for dinner recipe, I was totally on board. We’ve been on a bit of a sliders kick lately (who doesn’t love a cute little sandwich), so I thought it would be fun to make some sliders with pancakes. Obviously we had to call them Silver Dollar Sliders.

Not only am I all about breakfast, I absolutely adore breakfast sandwiches. Carbs? Good! Sausage? Good! Eggs? Good! (if you heard Joey from the episode of Friends with the beef trifle – bonus points for you!). How fun are these darling little slider sized pancake sandwiches? I had a great time making, serving and eating these!

These are so easy to make, and flexible! Use what you have on hand or what you love! While my husband and I love sausage, my girls are slightly less enthusiastic, so eggs and cheese do it for them. Use bacon, Canadian bacon, whatever works for you! Cook your eggs any way you like! This is one of those recipes that is a starting point for you to take and make your own.

A delicious and easy recipe that is perfect for breakfast, or breakfast for dinner! Check out at Krusteaz!

Ingredients
 

  • 2 cups Krusteaz Buttermilk Pancake Mix
  • 1 1/2 cups water
  • 7 sausage patties (approximately 3" in diamater, fully cooked)
  • 7 eggs (prepared in preferred style, poached or scrambled work well)
  • Optional: 7 slices cheese of choice

Instructions
 

  • Prepare pancake mix using Krusteaz Buttermilk Pancake Mix and water according to package direction. Pour slightly more than 1/8th of a cup batter per pancake. A small cookie scoop is great for creating a silver dollar pancake, approximately 3" in diameter. Cook at least 14 pancakes. Cook pancakes approximately 45 seconds to 1 minute per side, turning only once.

These are a great breakfast for dinner option, but just as perfect as a breakfast for, well, breakfast. Have I mentioned that I love breakfast? Seriously. So good. I’ve never been one of those people who skips breakfast. I’m probably closer to the hobbit end of the scale, wondering when second breakfast is. Technically breakfast for dinner qualifies as second breakfast, right? 🙂

These would also be fabulous for left over pancakes. When I make pancakes, I almost always make a double batch for leftovers. If you are making pancakes on a weekend morning, make some extras and put them in the freezer to reheat and serve for a quick and easy weeknight dinner. Nothing better after a busy day than a dinner you can throw together in no time, that everyone in the family will love (those are the BEST nights in my book!).
