  • Doritos – This recipe calls for the regular Nacho Cheese Doritos. If you want, you can use the spicy version, or go with Cool Ranch. You can also just substitute plain tortilla chips if you don’t fancy the Doritos flavor. 
  • Rotisserie Chicken – A rotisserie chicken is the favorite for this recipe only because it’s meant to be easy! You can also cook up your own chicken breast or thighs and use that instead. 
  • Beans – Black beans are ideal for this recipe, but you could also use Pinto Beans! 
  • Corn – This recipe calls for a can of corn, but you can also use frozen corn that’s been fully thawed. 
  • Rotel – Adding a can of Rotel adds some spice and lots of flavor. If you don’t like Rotel you can leave it out or add a can of drained diced tomatoes. 
  • Cream of Chicken Soup – Cream of chicken soup is a no-brainer when it comes to casseroles.
  • Sour Cream – The sour cream really adds an extra level of creaminess to this recipe. 
  • Taco Seasoning – A packet of taco seasoning is ideal, or make your own by combining an equal amount of each of the following spices: Cumin, chili powder and garlic powder. 
  • Cheddar Cheese – Freshly grated cheddar cheese is ideal because it melts a lot better, but use the pre-packaged kind if it’s easier. If you don’t like cheddar you can use Monterey jack, white cheddar, or Colby jack. For an extra kick, you can use pepper jack. 
  • Toppings – The toppings used in this recipe are cherry tomatoes and some cilantro, but feel free to get fancy with your family’s favorites. Green onion, olives, avocado, and so much more!

How To Make Dorito Chicken Casserole

  1. Start by preheating your oven to 350°F. Spray a 9×13 baking dish with non-stick spray. Crush up your Doritos, then take half of it and spread an even layer of the crushed Doritos over the bottom of the casserole dish. 
  2. In a large mixing bowl, add the pieces of rotisserie chicken, black beans, corn, Rotel, cream of chicken soup, sour cream, taco seasoning and 1 cup of the freshly grated cheese. Mix everything in the bowl together until combined. 
  3. Add the mixture on top of the Doritos layer in the baking dish and spread it out evenly. Then add the remaining crushed Doritos on top as well as a layer of cheddar cheese. 
  4. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese turns a light golden brown color. Remove from the oven, and garnish with cherry tomatoes and cilantro. Scoop out your servings as you see fit, serve hot and enjoy!

Christi’s Kitchen Tips

Make It Ahead and Save Time! You can make the filling ahead of time and keep it in the fridge for up to a day before you bake. Add the crushed Doritos right before you bake so the chips don’t lose their crunch!

Crush it Up – If you don’t want to crush an entire full size bag of Doritos for this recipe, you can move the amount you need to a gallon baggie, and then use your hands to crush them up that way. I don’t recommend using a food processor or anything similar to crush it, you don’t want the pieces to be too fine.

Storage – Store the leftover casserole in an airtight container in the fridge for up to 2-3 days. I don’t recommend freezing this recipe because it will ruin the texture of the Doritos. However, you can freeze the chicken mixture.

Ingredients
 

  • 3 cups Nacho Cheese Doritos (lightly crushed)
  • 2 cups rotisserie chicken (cut into small pieces)
  • 1 can black beans (15oz drained and rinsed)
  • 1 can corn (15oz drained)
  • 1 can Fire Roasted Rotel (10oz)
  • 1 can cream of chicken soup (10.5oz)
  • 1 cup sour cream
  • 1 tablespoon taco sesaoning
  • 2 1/2 cups cheddar cheese (freshly grated)
  • 1/4 cup cherry tomatoes (quartered )
  • 2 tablespoons cilantro (chopped)

Instructions
