When the weather heats up, I’m all about easy dinners. These Pulled Pork Nachos are stand out choice when it comes to quick, easy and delicious, all in one pan. If I’m making BBQ pork, I’ll double the recipe so we have leftovers to make these. That said, I also find the ready made pulled pork at the store to be a great option. Either way you can whip these up in a matter of minutes.

Ingredient Info
- Pulled Pork – I often use the ready made pulled pork from the store. Both Costco and Sams have have solid options for this. You can toss it with your own barbecue sauce, or leave it as is. I prefer to heat it up according to the package directions prior to putting this dish together. You can always use your favorite pulled pork recipe as well.
- Freshly Grated Cheese – Monterey Jack Cheese is a great choice because of that amazing cheese pull. Cheddar cheese however is the best option for flavor in my opinion. Using both in this recipe works so well. I highly recommend using freshly grated cheese as the pre-grated cheese doesn’t melt as well. If you don’t feel like grating a whole block of cheese, you have to run out and grab one of these hand crank cheese graters. They’re life changing!
- Tortilla Chips – I use whatever we have on hand. Doritos can even be used for some extra flavor. Kettle Cooked Potato Chips are also surprisingly delicious as a base for this recipe, especially paired with the pulled pork! The only thing I avoid is the thin style tortilla chips, they break a bit too easily.
- BBQ Sauce – The bottled barbecue sauce will work just fine for this recipe. I like Sweet Baby Ray’s, Famous Dave’s or Kinder’s. If you have a homemade recipe you like to use, make that instead!
- Toppings – Have some sliced jalapeños and diced red onions ready to throw on top before you bake the nachos. That said if you family doesn’t like the heat, you can cut back on these, or even leave them out. After you bake, some great toppings include diced tomatoes, sour cream, cilantro and salsa!

Step by Step Instructions
- Preheat the oven to 400°F. Grab a 10 inch cast iron pan and spread an even layer of tortilla chips on the bottom of the pan.
- Add half of the heated pulled pork, half the red onions, half of the sliced jalapeños, 2 tablespoons of BBQ sauce and half of both freshly grated cheeses on top of the first layer of tortilla chips.
- Layer on another even layer of tortilla chips on top of the toppings.
- Add the remaining pulled pork, jalapeños, onions, BBQ sauce and cheese on top. Bake in the oven at 400°F for 5 minutes, or until the cheese is melted and the pork is hot. Remove and add the remaining toppings. Serve hot, and enjoy!

Tips & Advice
Storage – I don’t recommend saving the cooked nachos as leftovers because they will get soggy, and difficult to reheat. Instead, I would save the toppings, stored separately in different containers in the fridge until you’re ready to assemble.
More Topping Options
For this recipe, you can add as many of your favorite toppings as you’d please! Feel free to add some diced green onion, pico de gallo, corn salsa, pickled jalapeños, black olives, avocado, guacamole, nacho cheese sauce, and so much more!

Equipment
You’ll need a 10 inch cast iron pan for this recipe. Don’t have one? No problem, you can assemble this on a parchment lined baking sheet instead, or a pan that is oven-safe.
FAQs
Cheddar Cheese is very sharp and will complement the flavors in the barbecue pork nicely. Monterey Jack is great for nachos because it has the best cheese pull!
Baking them in the oven with a layer of cheese on top should keep the chips nice and crisp for as long as possible. The more liquid-y toppings you add on top of the nachos, the faster they’ll start to get soggy. Avoid things like salsas & sour cream on top, and opt to serve it on the side instead.
While they can be a meal on their own, I love serving them with coleslaw, baked beans, watermelon or corn on the cob.
