I knew I had to recreate them myself, and let me say, it has been a game-changer. They are so much more affordable to make at home and I think they taste even better!

Not only can you save money by baking your favorite egg bites at home, but they also make the best grab-and-go snack for the morning. Similar to my Sheet Pan Eggs Recipe, making these egg bites all at once is a great way to keep the morning routine as simple as possible.

Ingredients You’ll Need

- Eggs – This recipe was tested using large eggs. If you find your eggs on the smaller side, you can add either an extra yolk or an entire extra egg to the recipe.
- Bacon – Whichever bacon you prefer will work.
- Cottage Cheese – I prefer a full fat cottage cheese in this recipe. This helps make your egg bites fluffy and it packs a big punch of protein.
- Cheese – I used Monterey Jack and Gruyere for these, but that is flexible. You can replace the Monterey Jack with cheese such as mozzarella, Colby jack, gouda or a mild white cheddar. You can use Swiss in place of Gruyere.
- Cornstarch – While this might seem like an odd ingredient in the recipe, it helps give the egg bites that wonderful custard like texture.
- Salt & Pepper – You can adjust the amounts of these to suit your tastes.
- Optional For Garnish/Serving: Hot Sauce and Chives
How To Make Starbucks Egg Bites

Step 1: Chop and cook up your bacon.

Step 2: Bring water to a boil, then pour into a 9×13 inch baking pan in the oven.

Step 3: In a blender combine eggs, cottage cheese, cheeses, cornstarch, salt, pepper & hot sauce (if using). Blend until smooth.

Step 4: Pour egg mixture into a muffin pan that has been generously greased with non-stick spray or oil. Bake over pan of water.

Don’t Skip The Water – While it might seem like an unnecessary step to add a pan of boiling water to the oven, the steam it creates helps give the egg bites that delicious custard like texture. It makes all the difference!
Storage Tips
To Store: Let egg bites cool completely, then transfer an airtight container for 3 to 4 days. If you would like to freeze them, allow to cool completely, then place egg bites on a tray making sure that they are not touching and freeze until solid. Then they can be placed in a freezer bag. They can be stored in the freezer for up to three months.
To Reheat: From fridge, heat in the microwave for approximately 30-40 seconds. If frozen, they can be thawed overnight and reheated, or can be microwaved for approximately 60-90 seconds.

Starbucks Egg Bites Recipe
Equipment
- 1 Muffin Pan
Ingredients
- 4 slices bacon (diced, optional to make an extra slice or two for garnish.)
- 6 large eggs
- 1 1/4 cups cottage cheese (4% milk fat preferred)
- 3/4 cups Gruyère cheese (freshly shredded )
- 1/2 cup Monterey Jack Cheese (freshly shredded)
- 2 tablespoons cornstarch
- 1/4 teaspoon salt (add more for taste if needed)
- 1/8 teaspoon black pepper (freshly ground)
- 1/2 teaspoon hot sauce (optional) (I used Tabasco)
- fresh chives (optional) (chopped for garnish, optional)
Instructions
- Bring a kettle or pot of water to a boil. Next, place one oven rack in the center of the oven, and one rack right below it. Preheat to 300°F, then place a metal or ceramic 9×13 baking dish on the lower rack and fill it halfway with the boiling water. Close the oven and allow steam to build.
- Grab a standard, metal, nonstick, 12-cup muffin pan and grease each cup with butter or cooking spray. Set aside.
- Cook the diced bacon in a non-stick skillet over medium-high heat, stirring frequently until browned and crispy. Usually 5-6 minutes. Remove from the pan with a slotted spoon, then let it cool and drain on a paper towel-lined plate.
- In a blender, add the eggs, cottage cheese, Gruyère, Monterey Jack, cornstarch, salt, pepper, and hot sauce. Blend for about 30 seconds or until smooth.
- Divide the liquid egg mixture evenly between each muffin cup, about 3/4 of the way full. Evenly divide and sprinkle the bacon pieces into each egg-filled cup, and gently press the bacon into the mixture. Bake for 20-25 minutes on the center rack until set. You'll know the egg bites are ready once they start pulling away from the edges of the wells.
- Once the eggs are cooked through and set to your liking, remove the muffin pan from the oven and let them rest for about 5 minutes in the pan. Use a spoon or butter knife to loosen the edges of the egg bites, then gently lift them out onto a plate. Garnish with chives and serve warm with a dipping sauce or on their own. Enjoy!
