Cookie Truffles are a cake pop, cookie, and candy – all in one! In 30 minutes, pre-made sugar cookies are mixed together with cream cheese, then covered in a silky white chocolate coating. When you need a last minute sweet treat, these sugar cookie truffles fit the bill perfectly.

No bake sugar cookie truffles are not only perfect to serve at parties, but make such fun, unique gifts as well. These bite sized treats are great to grab on the way out the door, or to eat by the dozen alone on your couch. Don’t worry, I don’t judge!

Ingredients for Cookie Truffles
  • Candy Melts – You want to use candy melts, almond bark or wafers. You don’t want to use chocolate chips because after they melt down, they don’t firm up quite as well as the candy melts. This recipe calls for vanilla or white chocolate melts, but you can use milk chocolate, dark chocolate, or any flavor you prefer.
  • Sugar Cookies – For this recipe you can use store bought sugar cookies, or you can bake homemade sugar cookies, let them cool and then create the dough.
  • Cream Cheese – Make sure the cream cheese has softened all the way to room temperature before adding it to the dough, otherwise it will be difficult to combine.
  • Butter – Unsalted butter is best for this recipe. You’ll want the butter to be softened to room temperature as well.
  • Vanilla Extract – Vanilla extract is preferred for this recipe, but you can use almond extract if you’d rather.
  • Sprinkles – This is optional but I don’t recommend skipping out on this fun, colorful ingredient.

Step By Step Instructions

  1. Begin by lining a baking sheet with parchment paper to put the finished truffles on. Set this aside. Grab a food processor, and add in all the sugar cookies.
  2. Pulse the sugar cookies until they become fine crumbs. In a separate bowl, add the softened cream cheese, vanilla extract, and softened butter to a bowl and beat it together with an electric mixer until smooth. 
  3. Add the sugar cookie crumbs to the cream cheese mixture and fold it together to create a dough. 
  4. Use either a cookie scoop or your hands to form lime-sized balls of dough. Place the balls on the parchment lined baking sheet and put them in the fridge for 15-20 minutes. 
  5. While the dough cools, melt the vanilla chocolate wafers in the microwave. When heating, be sure to microwave the chocolate in 30 second intervals, stirring after each interval. Take the sugar cookie dough balls out of the fridge and dip each one into the white chocolate and use a fork to scoop it out of the chocolate. Place them back on the baking sheet. 
  6. Immediately sprinkle the sprinkles over top of the sugar cookie truffles while the chocolate is still warm so they stick. Allow the truffles to cool until set, then serve and enjoy!

Tips and Advice

Storage – Store the leftover truffles in an airtight container in the fridge for about a week or in the freezer for 2-3 months.

Equipment – For this recipe you’ll need a baking sheet and parchment paper, a food processor, a few mixing bowls, an electric mixer, and a fork.

Double Boiler – You can melt the chocolate using a double boiler instead of microwaving it. Just heat a pot of 1-2 inches of water on the stove and put a large glass bowl, or another pot over the top of the pot full of water. Add the chocolate wafers to the top bowl and stir consistently until the chocolate melts fully.

FAQs

What is the difference between truffles and cake pops?

Truffles are usually more dense and more rich, where cake pops are make of cake and tend to be lighter. This recipe isn’t a true truffle because it’s made of sugar cookies. But, all you really need to know is that it all tastes delicious!

Are cookie truffles hard or soft?

The texture of these cookie truffles are fairly soft on the inside, and easy to bite into.

In 30 minutes, pre-made sugar cookies are mixed together with cream cheese, then covered in a silky white chocolate coating. 

Ingredients
 

  • 12 sugar cookies
  • 2 ounces cream cheese (softened and at room temperature )
  • 2 tablespoons unsalted butter (softened and at room temperature)
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups vanilla candy coating, melts or almond bark (other flavors can be used)
  • 1/4 cup small sprinkles

Instructions
 

  • Line a baking sheet with parchment paper or a silicone baking mat and set aside.
  • Place the sugar cookies in a food processor, and pulse them into fine crumbs.
  • In a large mixing bowl, beat the cream cheese and unsalted butter until well combined using an electric mixer. 

  • Add the sugar cookie crumbs to the cheese mixture. Gently fold to incorporate until a dough forms.

  • Using a cookie scoop or clean hands, scoop approximately two tablespoons of dough and roll it into balls, placing them on the prepared baking sheet. Refrigerate for about 15 – 20 minutes.

  • Meanwhile, melt the vanilla candy melts in a microwave oven at 30 seconds intervals until melted. Stir well between each interval as this helps to melt the chocolate.
  • Dip the sugar cookie dough in the melted chocolate using a fork, and carefully place it back on the baking sheet placing an inch apart each other.
  • Immediately sprinkle a few birthday sprinkles over sugar cookie balls. Repeat the process for the remaining sugar cookie dough.

Notes

Store the sugar cookie truffles in an airtight container in the refrigerator for up to a week time or freeze them for about 2 – 3 months.
