Okay, a bit of a crazy combo for you today…
Gummy. Bear. White Chocolate. Cupcakes.
Yes, I said gummy bear white chocolate cupcakes. My daughter came home from camp last week and told me that one of her teachers was having a birthday and that white chocolate covered gummy bears were her favorite. (Wait, those exist?) I figured I could try and bring together the flavors of white chocolate and gummy bears in something birthday appropriate, cupcakes!
It turns out this idea isn’t too crazy, Dylan’s Candy Bar apparently sells a Gummy Bear Cupcake which you can check out over on The Cupcake Critic. So as crazy as the combo sounds, there must be some sort of a market for it. I have to admit, they are really cute and colorful.
To make these I used a white cake mix and topped them with a white chocolate frosting. A really, really delicious white chocolate frosting that is CRAZY good. Like I should start putting white chocolate in all frosting good.
After frosting these, I just added gummy bears. Super easy. Think of all the fun candies you can add to top your cupcakes.
Fun stuff. 🙂
Now I need to give you the recipe to this delicious white chocolate frosting!
White Chocolate Frosting on Gummy Bear Cupcakes
- 4 Cups Powdered Sugar
- 1 Cup Softened Butter
- 4 oz Bakers White Chocolate melted and cooled
- 2 to 4 TBSP Half and Half you can also use milk or whipping cream
- Pinch of salt optional
- In a stand mixer, mix butter until fluffy. Add two cups of the powdered sugar (and salt if using) and beat until well combined. Slowly drizzle melted white chocolate into mixing bowl and beat on medium to high for one to two minutes until well combined with butter and powdered sugar mixture. Add in remaining powdered sugar and two tablespoons of half and half. Beat on high until light and fluffy. Add in additional half and half, a few drops at a time, as needed and continue mixing to reach your desired consistency.
So fun. The wheels are turning thinking of all of the other types of candy I want to put onto cupcakes!
