We love breakfasts, especially for dinner. From buttermilk pancakes to coffee cake, biscuits and gravy to tater tot breakfast casserole, we love it all. But one recipe reigns supreme above all others… Brioche French Toast. I try not to throw the word “best” around all that often, but I truly feel that this is one of the best french toast recipes you’ll ever have!

Ingredient Notes and Substitutions
Brioche – Brioche is a wonderful enriched egg bread that creates a buttery and flavorful French toast. When I can find it, my top choice of brioche for this recipe is La Boulangere French Hand Braided Brioche. I find it at Costco. While they don’t have it every time, I’ve found it consistently for the past few years. If you don’t have brioche, my back up option is Challah.
Milk – If you have whole milk, it’s wonderful in this recipe. That said I often make it with 2% milk because that’s what I have on hand.
Sugar – While it’s a small amount, you can leave it out if you like. We often skip the syrup on our french toast, and thus like this little bit of added sweetness. It also helps create the lovely golden brown tone.
Butter – The butter goes into the pan, not the recipe itself. Technically you can skip this, but I really recommend that you use it. Melting or brushing some butter into the pan helps give the brioche French toast an amazing caramelized flavor. I often just brush softened butter into the pan after making each piece.
Eggs – I always use large eggs in this recipe. If you are using small eggs, you might want to add an extra one.

- Place eggs, milks, vanilla extract, sugar, cinnamon and salt into a large bowl and whisk until well combined.
- Place approximately 1-2 teaspoons of butter into a medium size skillet and heat over medium heat. Once skillet is hot, dip one piece of brioche bread into the egg and milk mixture, let extra liquid drip back into the bowl, then transfer to prepared pan.
- Cook until golden on each side, approximately 2-3 minutes each, depending on your heat and your pan. Repeat with remaining slices of bread, adding more butter to the pan as needed.
Tips and Advice
Scale Up or Down: It’s very easy to scale this recipe up or down. Because it freezes well, I usually double the recipe and freeze the leftovers.
Serve Warm: While I often feed my family while I’m still cooking french toast or pancakes, if you want to serve the entire batch piping hot at once, here’s a tip. Place each slice of French toast on a baking sheet and bake in an oven preheated to 350 degrees for 5-10 minutes. This is great if you want to serve all the French toast hot at once.
Toppings: This brioche French toast is delicious topped with butter, powdered sugar, syrup, berries, nutella – whatever you like! My daughters like when I mix some melted butter with powdered sugar to make a frosting like glaze to be drizzled over the top. Storage: Leftovers can be kept in an airtight container, such as a Ziploc style freezer bag, for up to four days, or into a freezer up to two months. Reheat in the microwave, oven or in an air fryer.

Soggy French toast is caused by using bread that is too thin, too flimsy or soaked in the mixture too long. I recommend using brioche, which stands up to the egg mixture, and simply dip your bread into the egg mixture, then right into the pan. Don’t leave it in the egg mixture.
