Ingredients You’ll Need

This is a discussion about the ingredients. For the actual recipe with amounts, please see the recipe below.
- Cream of Mushroom Soup: Use a condensed Cream of Mushroom Soup, not a cream of mushroom with extra liquid added. You can also use Cream of Celery Soup or the Unsalted Cream of Mushroom. If you use the unsalted, I recommend adding 1/4 teaspoon of salt to the soup base.
- Green Beans: Drain the green beans before adding them to the casserole. You can use fresh or frozen, thawed green beans. See below for how to prep fresh and frozen green beans, as well as the amounts needed.
- Crispy Fried Onions: Make sure you divide the amounts accordingly so you have some to add to the filling and plenty to top the casserole with.
- Milk: Whole milk is ideal since it’s the creamiest, but 2% will work too. We like our casserole a bit creamier so I use a touch extra milk when I make mine, but you can make it either way.
- Black Pepper: Either freshly cracked or ground black pepper is fine.
- Optional Items: You can also add soy sauce and/or garlic powder for a little extra savory flavor kick.
Using Fresh or Frozen Green Beans
If you don’t want to use canned green beans, you can use either fresh or frozen green beans.
Fresh: Trim the ends of approximately 1.5 lbs of green beans. Boil a large pot of water and blanch/boil them for 2-4 minutes. Immediately drain and add them to a bowl of ice water to stop them from cooking. Once cooled, remove from the ice water and pat dry. Use in the recipe as normal.
Frozen: Thaw the green beans overnight in the fridge (preferred), or cook them at half the recommended time and then let cool a bit. Drain any excess liquid before adding to the recipe. Use anywhere from 16-20 oz of green beans.
Either way, make sure you pat them dry, otherwise the extra water can make the sauce runny.

Christi’s Make-Ahead Tips!
Make Ahead: I try to prep as many dishes ahead of time as possible during the holidays, and Campbell’s Green Bean Casserole is SO easy to make ahead and freeze.
- Make the filling but leave out the onions until ready to bake. Cover the baking dish tightly and either freeze or refrigerate the dish. (If frozen, thaw in the fridge completely before baking.) Just prior to baking, mix the 2/3 cup fried onions into the filling, then follow the baking directions as listed in the recipe.
- To save space, you can make the filling then transfer it to an airtight storage container or even a freezer bag. This is often easier to find precious fridge space for than a casserole dish.
- Take the casserole out of the fridge about an hour before baking, so that it can lose some of the chill from the fridge. Then top and bake as directed.
- If you end up needing to go straight from the fridge to the oven, you will need to increase the bake time around 5-15 minutes given how cold the casserole will be. You might need to add a sheet of foil to the top of the dish towards the end to prevent overbrowning.
- Make sure to double check its temperature prior to serving to make sure it’s heated through.
- IMPORTANT NOTE: If using a glass baking dish, please note that rapid temperature changes, such as going from the refrigerator to the oven, can cause glass to crack. In this case a metal pan is great, or store the bean mixture in a different container, so that the baking dish is room temp.

Storage Tips
Storing: Keep the leftover Campbell’s Green Bean Casserole in an airtight container in the fridge for 3-4 days.
Reheating: I prefer to reheat this in the oven at 350°F until warm, to get back that crisp on top! You can also just reheat a serving in the microwave until warm.
