Velveeta Cheese – While Velveeta isn’t the cheese I turn to for most recipes, it’s absolutely perfect in this easy queso recipe. You just can’t beat it’s meltability, and it doesn’t gum up and clump the way that traditional cheese can.

While this traditionally is made with the original Velveeta Cheese, you can also make it with the Velveeta Queso Blanco, Sharp Cheddar, 2% Milk, Mexican or Jalapeno Cheeses. The last two will turn up the heat, so just make sure that is what you are going for.

Ro*Tel Original Diced Tomatoes & Green Chilies – The most important thing to take note of is that you are using the Rotel UNDRAINED. You can drain it, but the dip will be thicker. I find that leaving the tomato juices in helps create a wonderful flavor and texture in this dip.

There are a variety of options when it comes to Rotel. You can use the Original, Serrano, Mild, Hot, Fire-Roasted, No-Salt, Mexican Style or Chipotle. Whichever suits your taste will work.

It’s easy to get creative with this Rotel Cheese Dip. In addition to mixing up which varieties of Velveeta or Rotel you use, you can also add in additional ingredients as well. Here are some possible additions:

  • 8 ounces of refried beans
  • 1 cup of sour cream
  • Chopped green onions
  • 6 ounces of chopped grilled chicken
  • 1/2 pound of cooked, drained sausage
  • 1 tablespoon finely chopped chipotle pepper in adobo sauce
  • 1/2 cups drained, rinsed black beans

Serving Rotel Cheese Dip

You just need two ingredients and a few minutes time to whip up an irresistible batch of the famous Velveeta Rotel Dip!

Ingredients
 

  • 16 ounces Velveeta Cheese (Cut into ½-inch cubes)
  • 10 ounce can Rotel Diced Tomatoes & Green Chilies (undrained)

Instructions
 

  • Combine undrained Rotel and Velveeta in a large microwave safe bowl and cover.
  • Microwave on HIGH 5 min. or until VELVEETA is completely melted, stirring after 3 min. Take care, the dish will be hot.
  • Serve with assorted cut-up fresh vegetables, crackers, or tortilla chips.

Notes

This recipe can be easily doubled, change cooking time to 8 minutes if doubling. 
For a thicker dip, drain the can of Rotel prior to using. 
To make on the stovetop, place ingredients into a medium or large saucepan and cook over medium heat, stirring frequently, until mixture is melted and completely blended, approximately five minutes.

    The easiest dip to make for a party of any type. it is so good!
    I work in a school and it is a go to item for any staff celebration we may have!

  3. I tried that yesterday and it burned! We used to make it in crockpot and it would take a while to melt, i don’t know if the formula changed or what, but yesterday it melted too quickly!

    1. Are you using the same crockpot? My two crockpots cook pretty differently, and I’ve noticed that as they get older, mine seem to run a lot hotter – heck I had one boiling something when it was just on warm the other day. I can’t speak for the ingredient formula, but I do know that crock pot temps can vary quite a bit. I wish they were more standardized!
