Reasons You’ll Love This Recipe

Quick and Easy Cocktail – This Jack Frost Cocktail looks impressive but takes just minutes to put together.

Coconut Rim – Shredded coconut on the rim looks just like snowflakes!

Tropical Flavors – Pineapple and coconut are extra delicious blended with light rum.

Nonalcoholic Option – Looking for a tasty mocktail that everyone can enjoy? Leave out the rum and replace the Blue Curacao with some Blue Curacao Torani Syrup. Davinci also makes a Blue Curacao Syrup as well.

Did I mention the rum? Despite the chilly name of the Jack Frost Cocktail, the rum gives it a little bit of warmth that makes it perfect for this season. It’s equal parts winter-y and summer-y, so you can feel free to make it all year long. It’s a fabulous winter cocktail!

And look how pretty it is! If you’ve ever had a Tipsy Snowman drink at Applebees, it has a similar look. It’s a gorgeous frozen blue Christmas drink!

Ingredients and Substitutions

Ingredients to make a Jack Frost Cocktail
  • Ice – Make sure your ice is made from filtered water, or whatever you would use for drinking. Living in a place with very hard water, I never cease to be amazed how drastically different our water and ice taste when a filter runs out, and it can absolutely impact your drinks.
  • Light Rum – Light rum is also known as white or silver rum, has almost no color and typically has a light flavor. I used Bacardi for this recipe. If you want a stronger coconut flavor, feel free to use a coconut rum.
  • Blue Curacao – This is a Curacao liqueur, that has a sweet orange peel flavor, with just a touch of bitterness. It is similar to Triple Sec. In this recipe it creates the gorgeous blue color you see.
  • Pineapple Juice – Make sure to select a pineapple juice that does not have any added sugar.
  • Cream Of Coconut – My favorite choice when using cream of coconut is Coco Lopez. It has a great flavor and texture and works like a dream in drinks.
  • Shredded Coconut – To garnish the rim of your glass, you’ll use unsweetened shredded coconut.
  • Corn Syrup – Corn syrup is used to help the coconut stick to the rim of the glasses. You could also use simple syrup. Because coconut has some weight to it, I find that just using water or juice doesn’t work as effectively.

How To Make A Jack Frost Drink

  1. Sprinkle some shredded coconut into a shallow bowl or plate and set aside.
  2. In another bowl or plate add some corn syrup. Dip your serving glass in the corn syrup being careful not to apply too much so that it drips down the glass.
  3. Next dip the corn syrup rimmed glass into the shredded coconut. You may need to dip certain areas a few times to make sure it sticks and is even. Repeat with your second glass and set aside.
  4. Add ice to the base of your blender.
  5. Next add the rum, Blue Curacao, pineapple juice, and cream of coconut to the blender.
  6. Blend until the mixture has reached a slushy consistency, add more ice if necessary.
  7. Divide the mixture into your prepared serving glasses being careful not to disturb the rim you created with the coconut.

Recipe Tips and Advice

  • If you feel like you added too much corn syrup to the glass you can use a food-safe paintbrush or a small piece of paper towel to blot off the excess before adding the coconut.
  • To make this recipe for a crowd: prepare rimmed glasses and set them on a tray in a cool dry place. Triple the recipe batch and add all the ingredients to a pitcher (except the ice) and place it in the refrigerator. When you are ready to serve add the ice to your blender, add the contents of your pitcher, blend and serve!!

Mocktail Frozen Blue Drink

To make a mocktail version of this drink, leave out the rum and replace the Blue Curacao with a Blue Curacao syrup. Both Torani and Davinci make them. You could also make your own simple syrup and add some blue food coloring. Blue Kool-Aid is even an option!

We had this drink at our Christmas party and instead of corn syrup for the rim, the bartender used honey. I told her to keep this recipe for our next Christmas party. The drink was delicious!
