This easy recipe makes about eight medium sized banana pancakes. The ripe bananas add a nutritional punch as well as nice level of sweetness that blends well with most traditional pancake toppings. The recipe for Banana Pancakes couldnāt be simpler. Most of the ingredients are probably already in your pantry. Flour, sugar, eggs, milk, buttermilk, butter, vanilla, baking powder, salt and, of course, bananas. You should use very ripe bananas for this recipe. The riper the better. As a matter of fact, these pancakes are an excellent way to use up any older bananas sitting on your counter.
Donāt panic about the buttermilk.If you donāt have any on hand, you can add a teaspoonful of white vinegar to half a cup of milk. Or you can simply substitute milk for the buttermilk for a slightly flatter but just as tasty pancake.
How to Make Banana Pancakes
Once you gather your ingredients and baking supplies, youāre ready to put this recipe together. Sift or whisk the dry ingredients together into one of the bowls in order to thoroughly mix them. This prevents the inevitable clump of baking powder that can ruin a perfectly good pancake.
Mash the two bananas in the other bowl before combining them with the beaten egg, milk, buttermilk, melted butter and vanilla.

Banana Pancake Recipe
Ingredients
- 1 1/4 cup all-purpose flour
- 2 tbsp sugar
- 3 tsp baking powder
- 1/4 tsp salt
- 1 large egg beaten
- 1/2 cup milk
- 1/2 cup buttermilk*
- 2 tbsp melted butter cooled
- 2 medium bananas, mashed the riper, the better
- 1 tsp vanilla extract
Instructions
- Combine flour, sugar, baking powder and salt in a bowl and stir to combine well. Set aside.
- In a separate bowl, combine egg, milk, buttermilk, melted (cooled) butter, mashed banana and vanilla extract. Mix until well combined, but do not over mix.
- Combine dry ingredients with wet ingredients and mix until all the dry ingredients are well combined, but do not overmix. The batter SHOULD be lumpy. Let batter sit for at least three minutes, allowing it to slightly bubble up. Do not stir at this point, or it will destroy the air bubbles that help make pancakes fluffy.
- Brush a non-stick griddle or frying pan with a light coating of butter or oil, then heat to medium heat. Make sure pan is heated prior to adding batter to it. Scoop batter onto the pan, approximately 1/4 cup for each pancake. Cook until pancake begins to puff up, bubbles appear in batter and the sides of the pancake appear to have cooked, then flip and cook the second side until golden brown. Serve immediately.
