- Start by preheating your oven to 350°F. Spray a 9×13 baking dish with non-stick spray. Crush up your Doritos, then take half of it and spread an even layer of the crushed Doritos over the bottom of the casserole dish.
- In a large mixing bowl, add the pieces of rotisserie chicken, black beans, corn, Rotel, cream of chicken soup, sour cream, taco seasoning and 1 cup of the freshly grated cheese. Mix everything in the bowl together until combined.
- Add the mixture on top of the Doritos layer in the baking dish and spread it out evenly. Then add the remaining crushed Doritos on top as well as a layer of cheddar cheese.

Make It Ahead and Save Time! You can make the filling ahead of time and keep it in the fridge for up to a day before you bake. Add the crushed Doritos right before you bake so the chips don’t lose their crunch!
Crush it Up – If you don’t want to crush an entire full size bag of Doritos for this recipe, you can move the amount you need to a gallon baggie, and then use your hands to crush them up that way. I don’t recommend using a food processor or anything similar to crush it, you don’t want the pieces to be too fine.
Storage – Store the leftover casserole in an airtight container in the fridge for up to 2-3 days. I don’t recommend freezing this recipe because it will ruin the texture of the Doritos. However, you can freeze the chicken mixture.
