If you love lemon, then you’ve got to make these easy lemon cookies! Whenever I think of dessert, I usually think “chocolate”, but lately I can’t get enough lemon, so today I’m sharing some super easy Lemon Cookies with you.

What makes these lemon cookies super fun is the cute yellow and pink Springtime Morsels from Nestle. I found mine at Target and it looks like you can also order some off Amazon. Update 2021: Nestle has new Spring Morsels! The Yummallo Unicorn Mix chips would also be great in these cookies!
2023 Update
Update 2023: These colorful chips come and go and change by the season. Here are the options I’ve found for this year…
- Supernatural Rainbow Baking Chips
- Sweet Tooth Fairy Rainbow Baking Chips
- Lemon Baking Chips
- Sweet Tooth Pink Baking Chips
- You can also chop up Pink and Yellow candy melts.

So darn fun. A few years back Nestle had some mini pink and yellow morsels that I adored, and used in a number of recipes, like these PEEPS Stuffed Crispy Treats, so I was excited to see that color combo again (though I still would love those minis!).

The chocolate ones had to go for these cookies, so I simply sorted the colors and used the pink and yellows for my cookies, which taste like white chocolate.

If you can find these fun and colorful chocolate chips, you can always use white chocolate chips in their place.

These cookies start with a boxed lemon cake mix. I debated going completely from scratch, but I really wanted to make sure I had a solid lemon base, and for that the cake mix method is perfect.

You need a few ingredients in addition to your cake mix – eggs, a lemon (or two if you are so inclined), oil and a little flour and baking powder (not shown in the photo above by the way!). I got about 20 cookies from my batch.

Lemon Cookies
Ingredients
- 15 ounce box lemon cake mix (You can use any standard size lemon cake mix that makes a 9×13 cake, 24 cupcakes, ect. )
- 2 tablespoons flour
- 1/2 tsp baking powder
- 2 eggs
- 1/3 cup vegetable oil
- Juice from one lemon
- Grated lemon peel from one lemon
- 1 cup pink and yellow Nestle Springtime Morsels (or white chocolate chips)
Instructions
- In a large bowl, combine all ingredients and mix well to combine. Dough will be quite sticky. Chill covered in refrigerator for 30-60 minutes.
- When ready to bake, preheat oven to 375 degree F. Once oven is ready, remove cookie dough from fridge and drop by spoonfuls (approximately 1-2 tablespoons per cookie) onto a baking sheet covered with parchment paper.
- Bake for 7-10 minutes or until very lightly browned.
- Remove from oven and allow to cool completely. Store tightly covered.
Notes

Meet Christi, Love From The Oven
I’m Christi I love sharing easy & delicious recipes that your family & friends will love. I’m a mom, baker, cookbook author and lover of sprinkles.
I made the cookies tonight and the chips turned brown at the tips… Definitely ruined the aesthetic of the cookie!
Elizabeth, I wonder if the racks in your oven are up high, close to the heat source? A few of mine started to very lightly brown as I was pulling them out, but obviously most of them looked the same as when they went in.
I tried baking at different rack heights with the same results. Maybe I could add a foil tent in the last few minutes?
LOVE! These cookies are so adorable! Love the colored chocolate chips!
Thanks Anna! Those chips are so fun, very easy to put to good use!
These look so yummy. I have a batch in my oven now to bring to a family birthday party tomorrow.
So perfect for a spring party, I hope you have a great time Bridget!
Do you make the cake mix according to the directions on the back or just follow your directions (ex: you say to use 2 eggs and the box says 3 eggs)
Thanks!!
Kit, follow the recipe that I have, unless you want to make a cake with your mix. 🙂
Fun way to use those chocolate chips! I need to make lemon cookies they sound delicious. I made a chocolate cookie with those same chocolate chips and the colors looks great.
The moment I saw these on Pinterest, I knew that I had to make them for a bridal shower I’m hosting this Sunday. Can’t wait to taste them! Thanks for the great recipe! (P.s. And I was so excited that I even blogged about them today!)
How fun for a bridal shower Meg! I hope that everyone enjoys them. I’m loving fun things like this for spring and a bridal shower – perfect!
Going to a potluck this weekend – this will definitely be my make and take. What an adorable idea for spring. Thank you!!!!
You are welcome Lia, have fun!
I’m in love with these Christi, and your photos too. The yellow just pops with the colors. Lemon cookies are the best!
Awe, thanks so much Dorothy!
These look so fun and festive for the Spring, Christi! Thanks for sharing. 🙂
Thanks David!
I am loving all of the colours going up in here. So bright and perfect for spring. I’m totally with you on the love of lemon, can’t get enough! Pinning this until I can get those colourful chips shipped to the UK
Rochelle, somewhere I saw a tutorial of someone who made their own colored chips. Can you get your hands on some yellow and pink candy melts? If so you could always chop up some of those and use them – they’d probably melt more than the chips, but possibly freezing them until right when you need them would help them hold up while baking. And they work great with white chocolate chips. 🙂 Yes, loving lemon these days!
