- Flour Tortillas – I find using flour tortillas is best for these dessert enchiladas. They’re softer and absorb the glaze better. Fresh tortillas would be great, but you can also use the store bought kind.
- Peach Pie Filling – This recipe calls for pre-made peach pie filling. The Lucky Leaf brand is a great option, but you can also make your own filling instead.
- Cinnamon – You’ll need this for the inside of the enchiladas as well as to make some cinnamon sugar to sprinkle on the top.
- Butter – Unsalted butter is best for this recipe.
- Sugar – You’ll need white granulated sugar and brown sugar for this recipe. You can use light brown sugar or dark brown sugar, there won’t be much of a difference.

- To begin you’ll grease a 9×13 baking dish. If you’re using store bought tortillas, warming them up for a few seconds in the microwave will help soften them.
- Next you’ll assemble your enchiladas by placing some of your peach filling into the center of a tortilla, sprinkling a bit of cinnamon and sugar over it, then rolling it up. You’ll repeat this until you’ve used all of the tortillas. There should be some peach filling sauce left in the can, you’ll want to use that for the sauce you will make to go on top.
- In a saucepan you’ll combine water, butter, white and brown sugar, as well as that leftover peach sauce from the can. It’ll come to a boil then you’ll remove it from the heat.
- The sauce gets poured over the enchiladas, then topped with a sprinkle of cinnamon and sugar. You’ll bake it in the oven for 25 minutes.

Storage – These peach enchiladas are best if stored in the fridge, covered tightly in the baking dish for 3-4 days. Make sure the baking dish cools completely before you store the leftovers.
To reheat, place the desired amount on a small baking sheet or dish and preheat the oven to 350°F. Bake for 10-15 minutes, or until warmed up in the middle. You can also microwave the leftovers for 30-60 seconds, or until warm. Do note that microwaving the leftovers will give the enchiladas a different texture.
Not So Sweet – Keep in mind that these peach enchiladas are a very sweet dessert. If you want, you can cut back the sweetness a bit by adding 1 tablespoon of lemon juice to the peach pie filling before you add it to the tortillas.

Better When Broiled!
After the baking time is up, you can actually broil the enchiladas for a minute or two so they have a nice, golden brown caramelized crust on top! It makes all of the difference and I definitely recommend it! That said, ALWAYS keep a close eye on your oven when broiling. It’s very easy to go from a lovely brown to a darkly burnt in a matter of seconds.

Make sure you’re using peach pie filling and not canned peaches. If you use canned peaches your enchilada will be runny. Also make sure that when you add water to the remaining peach glaze, that you add no more than ¼ a cup. Adding too much water will result in soggy, or runny enchiladas.

- 6 flour tortillas 8 inch
- 21 ounces peach pie filling
- 3 tablespoons cinnamon
- 1/2 cup butter 1 stick
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1/4 cup water
- 4 tablespoons cinnamon sugar
Instructions
- Preheat your oven to 350°F.
- Grease a 9×13 baking dish with butter or cooking spray.
- If you’re using store bought tortillas, warm them up for a few seconds in the microwave.
- Take one tortilla at a time and spread some peach filling into the center. Sprinkle about ½ a teaspoon of cinnamon on top of the filling. Roll the tortilla and place it into the baking dish with the seam facing down. Repeat until you use up the tortillas. There should be some peach glaze left in the can, save that to use for the sauce.
- Add ¼ cup of water to the can and mix it around to combine with the leftover peach glaze. In a large saucepan combine butter, white and brown sugar, as well as the leftover peach sauce and water from the can. Bring to a simmer before removing from the heat.
- Gently pour the sauce from the saucepan over the rolled tortillas in the baking dish. Be sure to cover the area completely. Mix cinnamon and white sugar together for the topping then sprinkle it over the tortillas.
- Bake for 25 minutes, or until golden brown and the fruit on edges are bubbling.
- Remove from the oven and allow it to cool slightly. Serve warm with some ice cream or whipped cream and enjoy!
