While this is an oatmeal recipe, I’m not kidding when I tell you this tastes like a freshly baked apple pie. The creamy oats, bright, fall-flavored apples and crispy walnut topping is everything you could ever want and more.

- Oats – I used rolled oats for this recipe. You can use steel cut oats, but they require a longer cooking time, and more milk. Adjust accordingly.
- Milk – You can use whole milk or any dairy free alternative.
- Apples – I used honey crisp apples, but you can use whichever apple you like, though, I don’t recommend using red delicious apples.
- Brown Sugar – You can also use maple syrup, honey, coconut sugar, or any sweetener of your choice.
- Spices – You’ll need ground cinnamon, nutmeg, all-spice and ginger. You can also use pumpkin pie spice in place of these spices.
- Chia Seeds (optional) – This adds a pudding-like texture to your oats as well as extra fiber. You can skip this if you’d like.

- Begin with the walnut topping. Melt butter in a skillet with the walnuts. Cook until golden brown. Remove from heat.
- In that same skillet, add remaining butter, and apples with the brown sugar and spices. Stir and cook until tender.
- In separate saucepan, add oats, milk, brown sugar, cinnamon, nutmeg and salt. Bring to a soft boil, then reduce the heat. Cook for 5-7 minutes then remove from heat. Add chia seeds and half the apple mixture. Stir and let sit for 5 minutes.
- Spoon a serving into a bowl, top with some of the apple mixture, walnuts and honey. Enjoy!

Get Creative! You can use this recipe as a base, and add or substitute your favorite mix-ins and toppings. If you don’t like walnuts you can swap them with pecans, or a different nut/seed. You can sprinkle in some raisins or dried cranberries, granola or even add a few slices of banana to the top. A drizzle of peanut butter or Nutella could also be a very nice addition.
Storage – Store the remaining oatmeal in an airtight container in the fridge for 3-4 days. You can store the apples and walnuts separately, or assemble them with the oats into serving sized containers for the week. You can also freeze the oatmeal for up to 3 months. Reheat on the stove with a splash of milk.
Make Ahead – This will last in the fridge for 3-4 days so you can make it ahead as normal and heat it up on the stove with a splash of milk.

Instructions
- Start by making your walnut crisp topping. Melt 1 tablespoon of butter in a skillet then add the chopped walnuts. Cook this until walnuts are golden brown. Remove from pan and set aside.
- In that same pan, melt the remaining amount of butter, then add your peeled and diced apples to the skillet. Sprinkle the brown sugar, cinnamon, ginger, allspice and nutmeg over the apples. Stir to combine. Let this cook on on medium heat until the apples are tender.
- In a separate saucepan, add the oats, milk, brown sugar and cinnamon, ground nutmeg and salt. Stir and bring pot over medium heat. Let this come to a soft boil, then reduce the heat to a simmer. Let it cook for 5-7 minutes, or until oats are done.
- Remove the pot from heat. Add chia seeds and half of the apple mixture to the oats. Stir to combine. Let it sit in the saucepan for 5 minutes.
- Spoon a serving of oats into a bowl, then top with a scoop of the apple mixture, the walnuts and a drizzle of honey. Serve immediately and enjoy!
