Turkey is great, ham is fabulous and green beans are nice, but when it comes to Thanksgiving dinner I am all about the Sweet Potato Casserole With Marshmallows! This deliciously easy dish combines mashed sweet potatoes with a brown sugar crumb topping and is finished off my sweet potato must have, marshmallows!

Easy Sweet Potato Casserole

If you’ve never made a homemade sweet potato casserole before, you’ll be happy to know it’s a recipe that’s as easy as it is delicious. It pairs perfectly with air fryer turkey breast, and the steps to create this amazing Thanksgiving side dish are simple. You bake or boil some sweet potatoes, mash them up, top them with an easy crumb mixture and marshmallows, and bake. The results are phenomenal. Sweet Potato Casserole Ingredients

Yams

The ingredients for this recipe are simple and fresh. There are few different varieties of sweet potatoes or yams available, and my top choice is always the Jewel Yam/Sweet Potato. You’ll see them referred to as both sweet potatoes and yams, but they are one in the same. When I think of sweet potatoes, these are the ones that spring to mind. They have a deep orange hue and a wonderful fluffy texture.

Heavy Cream

This dish gets it’s wonderful creaminess from Shamrock Farms Heavy Whipping Cream. I always have a bottle or carton on hand and find that I use it for so many things, from savory dishes like Chicken Pot Pie Soup to sweet ones. Shamrock Farms Heavy Whipping Cream is made with fresh ingredients from the farm, starting with their pure, wholesome milk from local family farms. I love that no artificial growth hormones are added – ever. The heavy whipping cream gives this dish a very creamy and fulfilling texture.

Other Ingredients

How To Make

Cook Sweet Potatoes

One of the things I like about this recipe is it’s flexibility. The sweet potatoes can be cooked by boiling them in a pot of water, as you would for mashed potatoes, or they can be baked. The plus to baking is that you don’t have peel and chop the sweet potatoes, just wash, pierce with a fork or knife, and bake.

Because sweet potatoes can vary greatly in size, some may require more baking time than others. If this is the case for you, you can simply pull the smaller potatoes from the oven and set them aside. One important note when baking sweet potatoes, place a silicone baking mat or parchment paper, sprayed with non-stick cooking spray, on your baking sheet before placing on the potatoes. They can get a bit stick when baking, and this will make for easier clean up.

After baking your sweet potatoes and allowing them to cool a bit, you simply peel the skins off. Easy peasy! Also, to save time on thanksgiving day, you can do this part the night before, and store the cooled potatoes in a freezer bag in your fridge until you are ready to use them. If you go this route, give your casserole and extra 5-10 minutes baking time to compensate for the cold potatoes.

Mash And Add Ingredients

Once you have your cooked potatoes, into a bowl they go. You can mash them with a potato masher or a hand mixer, whichever you prefer. Everything goes into the bowl and gets a good mixing, then into a casserole the potatoes go.

Prepare Your Topping

These sweet potatoes are topped with a decadent buttery, brown sugar oat topping. It’s easy to make, the ingredients are combined with melted butter, mixed up and sprinkled over the sweet potato mixture. At that point it’s into the oven.

Bake And Top With Marshmallows

Don’t worry, I didn’t forget the marshmallows! This will bake for about 20 minutes without the marshmallows. At that point marshmallows are added for the final 10-15 minutes, or to whatever level of doneness you like your marshmallows (I’m a lightly toasted gal).

Sweet Potato Casserole

A delicious and easy Sweet Potato Casserole topped with marshmallows and brown sugar crumb topping!

Ingredients
 

Sweet Potato Mixture

  • 4 pounds sweet potatoes (jewel yams work perfectly )
  • 1/2 cup brown sugar, packed (light or dark)
  • 4 tbsp butter
  • 1/2 cup Shamrock Farms Heavy Whipping Cream
  • 1 tsp salt
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice (ground nutmeg can also be used)

Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed (light or dark, can be reduced down to 1/4 cup if desired )
  • 1/4 cup rolled oats
  • 1/4 tsp cinnamon
  • 4 tbsp melted butter
  • 2 cups mini marshmallows

Instructions
 

Sweet Potato Mixture

  • To prepare sweet potatoes by boiling, wash, peel and cube sweet potatoes into pieces approximately 1" or less. Place into a large pot and cover with water. Make sure there is enough room for water level to be higher than potatoes by at least an inch. Over high heat, bring to a rolling boil. When potatoes are easily pierced by fork, drain potatoes and return to pot.
    OR
    To prepare sweet potatoes by baking, preheat oven to 425 F degrees. Wash and dry sweet potatoes. Pierce each sweet potato with a knife 3-4 times. Prepare a baking sheet by lining with foil and spraying with non-stick cooking spray. Place sweet potatoes onto prepared baking sheet and bake for 50-70 minutes, or until sweet potatoes are soft to the touch. Remove from oven and let cool slightly, then gently remove skins from baked sweet potatoes and place cooked sweet potatoes in a large bowl. Discard skins.
  • Preheat oven to 375 F degrees. To cooked sweet potatoes, add brown sugar, butter, Shamrock Farms Heavy Whipping Cream, salt, vanilla, cinnamon and pumpkin pie spice. Mash either by hand, or using an electric mixer for a smoother texture. Spoon mixture into a 9x13 or similar size baking pan that has been lightly sprayed with cooking spray. Evenly smooth potatoes through out pan. Set aside.

Prepare Topping

  • In a bowl combine flour, brown sugar, rolled oats and cinnamon. Stir to combine. Pour in melted butter and stir to combine until a crumb like texture develops. Sprinkle over potato mixture. Bake for approximately 20 minutes. Remove from oven and carefully sprinkle marshmallows over topping, then return to oven and bake for approximately 10-15 minutes or until marshmallows start to brown. Remove from oven and serve.

*Sweet potatoes vary greatly in size, four pounds is usually around 8 medium sized sweet potatoes. However some potatoes are much smaller, and some are much larger.  
When baking, if sweet potato sizes vary greatly, plan to remove smaller sweet potatoes around 50 minute mark and let larger sweet potatoes continue to bake as needed.

  1. I’d like to add pecans to the topping — just add them or perhaps delete the oats?
    Can I make this all on Wednesday, perhaps without putting on the topping?

    1. No need to delete the oats, just add in he pecans and you should be good to go. And yes, that is what I would recommend if making it in advance, then you can add the topping and pop it into the oven.

  2. I made it with gluten free oats and gluten free flour to make it gluten free. Super easy adjustments if you’re gluten free! (To person above asking)
